Buckeyes
Servings: ~4 dozen candies

Ingredients
2 c. creamy peanut butter
½ c. vegan butter
2 tsp. vanilla
3 c. powdered sugar
2 Tbsp. vegetable shortening or coconut oil
20 oz. vegan chocolate chips
Instructions
In a large mixing bowl, beat peanut butter, vegan butter, and vanilla until well-combined. This can be done by hand or with a mixer.
Gradually add powdered sugar until well-combined. If using a mixer, be sure it is on a low speed.
Scoop mixture into tablespoon-sized balls.
Roll the balls and place them onto a lined baking sheet.
Place baking sheet in the freezer for 30 minutes.
In the meantime, melt chocolate and shortening/coconut oil using the microwave or a double boiler on the stove. If using microwave, heat mixture for 30 seconds and then stir. Repeat until chocolate is completely melted.
Remove peanut butter balls from the freezer and dip them in melted chocolate using a toothpick. Make sure to leave some peanut butter showing for the classic buckeye look.
Freeze buckeyes until chocolate has hardened.
Notes
If you want crunchy buckeyes, add 1c. crisped rice cereal to the peanut butter mixture OR use crunchy peanut butter instead of creamy.
The toothpick will leave a small hole in the top of the candy. With gloves or clean hands, I like to smooth the peanut butter mixture with a finger to fill in the hole.
These candies freeze very well and last a while, so I like to make a batch and keep them in the freezer for holiday guests/gifts/movie nights/etc.
