Lazy Buckeyes
Servings: 36 small bars

Ingredients
1 c. creamy peanut butter
¼ c. vegan butter
1 tsp. vanilla
1 ½ c. powdered sugar
1 Tbsp. vegetable shortening or coconut oil
10 oz. vegan chocolate chips
Instructions
In a large mixing bowl, beat peanut butter, vegan butter, and vanilla until well-combined. This can be done by hand or with a mixer.
Gradually add powdered sugar until well-combined. If using a mixer, be sure it is on a low speed.
In a lined 8x8 baking dish, evenly press the peanut butter mixture.
Place baking dish in the freezer for 30 minutes.
In the meantime, melt chocolate and shortening/coconut oil using the microwave or a double boiler on the stove. If using microwave, heat mixture for 30 seconds and then stir. Repeat until chocolate is completely melted.
Remove peanut butter mixture from the freezer and cover with melted chocolate.
Freeze buckeye bars until chocolate has hardened.
Remove from freezer and cut into 36 pieces (6 x 6).
Notes
If you want crunchy buckeyes, add 1c. crisped rice cereal to the peanut butter mixture OR use crunchy peanut butter instead of creamy.
I recommend cutting these bars into small pieces. Buckeyes are very sweet.
These bars freeze very well and last a while, so I like to make a batch and keep them in the freezer for holiday guests/gifts/movie nights/etc.
