Peppermint Bark

Ingredients
10 oz. vegan semi-sweet or dark chocolate chips
10 oz. vegan white chocolate chips
1 tsp. peppermint extract
2 oz. crushed candy cane
Instructions
Line a baking sheet with parchment paper.
Melt semi-sweet or dark chocolate using the microwave or a double boiler on the stove. If using microwave, heat mixture for 30 seconds and then stir. Repeat until chocolate is completely melted.
Stir peppermint extract into the melted chocolate, and then spread a thin layer of chocolate onto the lined baking sheet.
Freeze the chocolate until it has hardened (approximately 10 minutes).
Melt white chocolate using the microwave or a double boiler on the stove. If using microwave, heat mixture for 30 seconds and then stir. Repeat until chocolate is completely melted.
Remove the baking sheet from the freezer and spread a thin layer of white chocolate onto the hardened semi-sweet/dark chocolate. Top with crushed candy cane pieces.
Freeze the bark until all chocolate has hardened (approximately 20 minutes).
