Blondies

Ingredients
2 Tbsp. flaxseed meal
6 Tbsp. water
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
¾ c. vegan butter, melted
¾ c. brown sugar
½ c. granulated sugar
2 tsp. vanilla extract
½ c. optional add-ins (chocolate chips, nuts, dried fruit)
Instructions
Pre-heat oven to 375°F.
In a small-sized bowl, mix ground flaxseed and water. Place bowl in the fridge for 15 minutes.
In a medium-sized bowl, sift all-purpose flour, baking soda, and salt.
In a separate bowl, mix vegan butter, brown sugar, granulated sugar, and vanilla extract. Once combine, add the flaxseed mixture.
Slowly add the dry ingredients to the wet ingredients.
Spread the blondie batter in a greased or lined 9x13 baking dish.
Bake for 18-20 minutes. You will be able to insert a toothpick and it will come out clean.
Cool the pan on a wire rack for approximately 1 hour before cutting and serving.
