Chocolate Peanut Butter Brownies

Brownie Layer
1 Tbsp. flaxseed meal
2 Tbsp. water
¼ c. unsweetened applesauce
2 c. semi-sweet or dark chocolate, melted
1 c. granulated sugar
6 Tbsp. vegan butter, melted
2 tsp. vanilla extract
1 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
¼ c. unsweetened cocoa powder
1 tsp. instant espresso
1 tsp. baking powder
1 tsp. salt
Peanut Butter Layer
2 Tbsp. vegan butter, softened
¼ c. peanut butter
1 c. powdered sugar
1 Tbsp. non-dairy milk
Chocolate Frosting Layer
3 Tbsp. vegan butter, softened
2 Tbsp. unsweetened cocoa powder
1 c. powdered sugar
¼ tsp. salt
1 Tbsp. non-dairy milk
Instructions
Preheat the oven to 350°F.
In a small-sized bowl, mix ground flaxseed and water. Place the bowl in the fridge for 15 minutes.
In a medium-sized bowl, sift all-purpose flour, cocoa powder, instant espresso, baking powder, and salt.
In a separate bowl, mix applesauce, chocolate, granulated sugar, vegan butter, and vanilla extract. Once combined, add the flaxseed mixture.
Slowly add the dry ingredients to the wet ingredients.
Spread the brownie batter in a greased or lined 8x8 baking dish.
Bake for 28-30 minutes. You will be able to insert a toothpick and it will come out clean.
Cool the pan on a wire rack for approximately 1 hour.
Using a handheld or stand mixer, beat all peanut butter layer ingredients. Spread onto the cooled brownies.
Using a handheld or stand mixer, beat all peanut chocolate frosting ingredients. Spread onto the peanut butter layer.
