Cowboy Cookies

Ingredients
2 c. all-purpose flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 tsp. cinnamon
½ c. softened vegan butter
½ c. granulated sugar
½ c. brown sugar
2 tsp. vanilla extract
¼ c. non-dairy milk
¼ c. neutral oil (e.g., canola or vegetable oil)
½ c. vegan chocolate chips
¼ c. pecans, chopped
¼ c. old fashioned oats
¼ c. shredded, unsweetened coconut
Instructions
In a large mixing bowl, sift together flour, baking powder, baking soda, salt, and cinnamon.
In a separate large mixing bowl, beat vegan butter, sugar, brown sugar, and vanilla extract.
Slowly mix the dry ingredients into the wet until combined.
Fold in the vegan chocolate chips, pecans, oats, and coconut.
Cover the bowl and refrigerate for at least 1 hour.
Preheat oven to 350° F.
Scoop dough onto a lined cookie sheet using a large cookie scoop.
Bake for approximately 12 minutes. The cookies should have a crust on the bottom but are still gooey inside.
Remove from the oven, cool on the baking sheet, and then move to a wire cooling rack.
Notes
My favorite affordable vegan chocolate chips are the Trader Joe's Semi-Sweet Chocolate Chips or chunks. Another great option is the Great Value Organic Baking Chips from Walmart (available in semi-sweet and dark).
