Ginger Molasses Cookies

Cookie Ingredients
1 ½ c. all purpose flour
1 ½ tsp. baking soda
½ tsp. salt
2 tsp. ground ginger
1 Tbsp. cinnamon, divided
½ c. vegan butter
¾ c. dark brown sugar
¼ c. molasses
2 tsp. vanilla extract
¼ c. sugar
Instructions
Pre-heat oven to 350°F.
In a medium-sized bowl, sift all-purpose flour, baking soda, salt, ground ginger, and 2 tsp. of cinnamon.
In a separate bowl, cream vegan butter and brown sugar until fluffy. Add in molasses and vanilla extract.
Slowly add the dry ingredients to the wet ingredients.
In a small bowl, combine sugar and 1 tsp. of cinnamon.
With a medium cookie scoop, scoop dough into balls and roll in the cinnamon sugar mixture.
Place cookies on a lined baking sheet and refrigerate for 1 hour or freezer for 20 minutes.
Bake for approximately 10-12 minutes.
Remove from oven and place on a cooling rack.
