Gluten Free Peanut Butter Cookies

Ingredients
1 Tbsp. flaxseed meal
3 Tbsp. water
½ c. natural creamy peanut butter
¼ c. vegan butter
⅔ c. brown sugar
1 tsp. vanilla extract
1 ¼ c. almond flour
1 tsp. baking soda
Instructions
Pre-heat oven to 350°F.
In a small-sized bowl, mix ground flaxseed and water. Place bowl in the fridge for 15 minutes.
In a medium-sized bowl, cream vegan butter and sugar until fluffy. Beat in the flaxseed mixture and vanilla extract.
Slowly add the almond flour and baking soda to the wet ingredients.
Scoop dough onto a lined cookie sheet using a small cookie scoop.
Using a fork, flatten the cookie slightly in a crisscross pattern.
Bake for approximately 10 minutes or until the edges are slightly brown.
Remove from oven, and cool completely on a wire rack.
Notes
Make sure you use natural peanut butter (only peanuts and salt). The additional oils/sugars in conventional peanut butter will affect the cookie.
