Slutty Brownie Cups

Chocolate Chip Cookie Layer Ingredients
1 c. all-purpose flour
½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
¼ c. softened vegan butter
¼ c. granulated sugar
¼ c. brown sugar
1 tsp. vanilla extract
2 Tbsp. non-dairy milk
2 Tbsp. neutral oil (e.g., canola or vegetable oil)
½ c. vegan chocolate chips
Brownie Layer Ingredients
½ Tbsp. flaxseed meal
1 Tbsp. water
2 Tbsp. unsweetened applesauce
1 c. semi-sweet or dark chocolate, melted
½ c. granulated sugar
3 Tbsp. vegan butter, melted
1 tsp. vanilla extract
½ c. all-purpose flour
2 Tbsp. unsweetened cocoa powder
½ tsp. instant espresso
½ tsp. baking powder
½ tsp. salt

Instructions
In a large mixing bowl, sift together flour, baking powder, baking soda, and salt for the chocolate chip cookie layer.
In a separate bowl, beat vegan butter, sugar, brown sugar, and vanilla extract.
Slowly mix the dry ingredients into the wet until combined.
Fold in the vegan chocolate chips.
Cover the bowl and refrigerate for at least 1 hour.
Preheat the oven to 350°F.
Slowly mix the dry ingredients into the wet until combined.
Fold in the vegan chocolate chips.
Cover the bowl and refrigerate for 1 hour.
Preheat oven to 375° F.
In a small-sized bowl, mix ground flaxseed and water. Place the bowl in the fridge for 15 minutes.
In a medium-sized bowl, sift all-purpose flour, cocoa powder, instant espresso, baking powder, and salt.
In a separate bowl, mix applesauce, chocolate, granulated sugar, vegan butter, and vanilla extract. Once combined, add the flaxseed mixture.
Slowly add the dry ingredients to the wet ingredients.
Using a greased/lined muffin pan, place a small ball of chocolate chip cookie dough in each cup. Using your fingers, evenly press down the batter to fill each cup.
Place one oreo on top of the cookie dough.
Place a scoop of brownie batter on top. Be sure the oreo is completely covered.
Bake for approximately 20 minutes. You will be able to insert a toothpick into the brownie layer and it will come out clean.
Cool the pan on a wire rack and enjoy!
Notes
For the easiest clean-up, use silicone cupcake liners!
