Snowballs

Wet Ingredients
½ c. powdered sugar (divided)
½ c. softened vegan butter
1 tsp. vanilla extract
1 tsp. almond extract
1 c. all-purpose flour
¼ tsp. salt
½ c. walnuts, finely chopped
Instructions
In mixing bowl, beat ¼ c. powered sugar, vegan butter, vanilla extract, and almond extract.
Once combined, add the all-purpose flour, salt and chopped walnut.
Using a small-sized cookie scoop, scoop the dough and roll into balls. Place the balls onto a lined cookie sheet and refrigerate cookies for 1 hour or freeze for 20 minutes.
Pre-heat oven to 350°F.
Bake for approximately 20 minutes.
Remove the cookies and immediately transfer to a cooling rack.
Cool the cookies for approximately 5 minutes and then roll in the remaining ¼ c. powered sugar.
Return the cookies to the cooling rack until they are completely cool.
