Twix Cookies

Cookie Ingredients
1 Tbsp. flaxseed meal
3 Tbsp. water
1 ¾ c. all-purpose flour
½ tsp. baking powder
½ tsp. salt
¾ c. vegan butter
⅔ c. granulated sugar
1 tsp. vanilla extract
½ c. vegan chocolate chips, melted
Instructions
Pre-heat oven to 350°F.
In a small-sized bowl, mix ground flaxseed and water. Place bowl in the fridge for 15 minutes.
In a medium-sized bowl, sift all-purpose flour, baking powder, and salt.
In a separate bowl, cream vegan butter and sugar until fluffy. Beat in the flaxseed mixture and 1 tsp. vanilla extract.
Slowly add the dry ingredients to the wet ingredients.
With a small cookie scoop, scoop dough onto a lined cookie sheet.
Using your thumb or the bottom of a wooden spoon, make an indent in each cookie.
Bake for approximately 15 minutes or until the edges are slightly brown.
Remove from oven. While the cookies are still warm, use the bottom of a wooden spoon to ensure there are still indents in the cookies.
Place the cookies on a cooling rack.
Once cooled, fill the indents with approximately ½ tsp. caramel sauce.
Drizzle the top of each cookie with melted chocolate.
