Chocolate Chip Pumpkin Bread

Ingredients
1 Tbsp. ground flaxseed
3 Tbsp. water
15oz. pumpkin puree
1 ¼ c. brown sugar
½ c. vegetable oil
¼ c non-dairy milk
1 tsp. vanilla extract
1 ¾ c. all-purpose flour
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
1 Tbsp. pumpkin pie spice
½ c. vegan chocolate chips
Instructions
Pre-heat oven to 350°F.
In a small-sized bowl, mix ground flaxseed and water. Place bowl in the fridge for 15 minutes.
In a bowl, mix pumpkin puree, brown sugar, vegetable oil, non-dairy milk, vanilla extract, and flaxseed mixture.
Add the flour, baking powder, baking soda, salt, pumpkin pie spice, and chocolate chips. Do not over mix.
Once combined, pour half the batter into a lined or greased loaf pan.
Bake for about 1 hour and 15 minutes, until a toothpick inserted in the center comes out clean.
Let the bread rest for approximately 30 minutes before serving.
