Coffee Cake

Cake Batter Ingredients
2 Tbsp. ground flaxseed
6 Tbsp. water
½ c. vegan butter
1 c. granulated sugar
½ c. plain unsweetened vegan yogurt
2 Tbsp. non-dairy milk
2 tsp. vanilla extract
1 ½ c. all-purpose flour
½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
Cinnamon layer Ingredients
¼ c. granulated sugar
1 Tbsp. all-purpose flour
1 tsp. cinnamon
Streusel Ingredients
½ c. brown sugar
½ c. all-purpose flour
1 tsp. cinnamon
¼ tsp. salt
¼ c. vegan butter
Instructions
Pre-heat oven to 350°F.
In a small-sized bowl, mix ground flaxseed and water. Place bowl in the fridge for 15 minutes.
In a bowl, cream ½ c. vegan butter and 1 c. granulated sugar. Add in the flaxseed mixture, yogurt, non-dairy milk, and vanilla extract.
In a separate bowl, sift flour, baking powder, baking soda, and ¼ tsp. salt.
Gradually add the dry ingredients to the wet. Once combined, pour half the batter into a lined or greased 8x8 baking dish.
In a small bowl, combine all cinnamon layer ingredients. Sprinkle the mixture over the batter in the baking dish.
Add the remaining half of the batter on top of the cinnamon layer.
In a shallow bowl, combine brown sugar, ½ c. flour, 1 tsp. cinnamon, and ¼ tsp. salt. Once combined, use a fork to mash ¼ c. vegan butter into the mixture until crumbly.
Even spread the streusel on top of the batter.
Bake for approximately 50 minutes. You will be able to insert a toothpick and it will come out clean.
Let cake rest for 1 hour before serving.
