Jalapeño Pretzel Bites

Ingredients
2 c. warm water
2 packets (2 ¼ tsp) active dry yeast
¼ c. granulated sugar
5 c. all-purpose flour
2 Tbsp. melted vegan butter
2 jalapeños, de-seeded and diced
½ c. baking soda
10 c. water
Coarse sea salt
Instructions
In a large-sized bowl, combine dry active yeast, sugar, and warm water. Let sit for 10 minutes. If it isn't foamy, dump it and get new yeast.
Add flour and melted vegan butter to the yeast mixture. Combine until the dough is shaggy, and then add the jalapeños.
Lightly flour a work surface and knead the dough for approximately 5 minutes.
Place the dough in a large, lightly greased bowl. Cover with a clean dish towel and let rise for approximately 1 hour.
Pre-heat oven to 400°F.
Using your hands, rip off pieces of the dough and roll into 1-inch sized balls.
On the stove, boil 10 cups of water. Once boiling add the baking soda.
Using a spider strainer or slotted spoon, ladle the 5-10 pretzel bites into the baking soda bath for approximately 5 seconds.
Place pretzel bites onto a lined baking sheet. While they are still wet from the baking soda bath, sprinkle a little coarse sea salt on top.
Bake for approximately 12-15 minutes or until the pretzel bites are golden.
Serve with your favorite dipping sauce.
